For many months I was doing a series called the Little Black Dress’s Guide to a FabYOUlous you!

I started it for many reasons, but most of all I love helping women live healthy lives and to share tips on staying healthy – both inside and out.   From my women’s seminar Discovering a New You, to the teen’s seminar Pure EmPowerment, my desire is to help women of all ages achieve optimum health emotionally, spiritually and physically!

I took a break from this weekly post, but I have just had a nagging ache in my spirit to kick it back into high gear and share the LBD’s  guide again.  Some posts will be new and some will be encores, but I hope you will start following along again and share it with other women you believe it may empower and equip them with some practical tools they may need to be fabYOUlous!

So because I love healthy, nutricious and delicious food today’s LBD’s Guide to a FabYOUlous you is about healthy eating!

Foods that make me feel and look good both inside and out.

In Winters’ third book, The Little Black Dress And The SONs of Thunder ~ Recipes On Life And Food, he shares some of our favorite recipes.  Most, if not all the recipes are delicious, but when Winters cooks healthy is not his top priority. But I want to fit in my Little Black Dress so I have some of my own favorite healthy and delicious recipes which  did not make it into the book.

So I  have been working on a small cookbook of my own and today on The LBD’s Guide to a FabYOUlous You, I wanted to share one of my absolutely favorite dishes with you.

I hope it will help you feel fabulous too and help jump-start your efforts to get healthy.

Eating healthy does not mean you have to compromise taste as well as have boring meals or a diet loaded with prepackaged foods.  I learned to cook because I wanted to know how to cook healthy delicious food so I studied and read a million cookbooks.  Winters and I believe the kitchen is the heart of the home and that many wonderful memories are created around the celebration of family and food.

In fact, some of our best dancing occurs in the kitchen.  Really, I kid you not!  Let your children become a part of the meal.  We let the SONs cook all the time with us.  It may not always be easy to have their help, but it is a great thing to do.

I am sure you have heard “You are what you eat.”  I think that is so true. What you put into your body will either nourish it or harm it.  You have the choice about how you want to live and care for your body. We must also remember that we are to “eat to live” not “live to eat”.  Think fruit, protein, fiber, whole grains and portion control!

Some recipes I will have in the cookbook are so crazy easy it is almost ridiculous.  Others will take a bit of prep time, but so worth it in the end, especially when you share these unforgettable meals with friends, family or just yourself!  But best of all you will feel and look  fab in your own Little Black Dress!

Roasted Eggplant or Chicken

4 to 6 slices of Eggplant cut up

(If you opt for chicken use thin cutlets)

¼ cup Black Olives

¼ cup can chopped or fresh mushrooms

½ cup chopped red onion

3 tablespoons of extra virgin olive oil

Fresh made tomato sauce or pre-made marinara sauce

Pre-heat oven to 350 degrees.

Spray cooking spray in the bottom of an oven-safe dish. You can also use Olive oil. Coat the bottom with tomato mixture.  Next place the sliced eggplant in the dish.  Cover the eggplant again with tomato sauce.  Sprinkle dried basil, olives, and mushrooms and gently mix together. Then add the red onion. Pour in small bit of red wine only if you want to.  It does add to the flavor and richness of the dish.  But leaving it out is just fine too.

Place dish in the pre-heated oven. Cook for 30 to 40 minutes depending on the thickness of the eggplant.

Periodically check the eggplant while it is in the to oven make sure it is not getting too brown on top.

You may serve it in the dish you baked it in, or on another platter. Sprinkle with shredded parmesan cheese and fresh basil and then enjoy!
